butternut squash casserole

Ingredients
  

  • 4 cups cubed butternut squash
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 2 eggs beaten
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup breadcrumbs

  • 9x13 inch baking dish
  • Large mixing bowl

Method
 

  1. Preheat oven to 375°F
  2. Peel and cube butternut squash
  3. Mix squash with cream, butter, eggs, and seasonings
  4. Transfer to baking dish
  5. Sprinkle Parmesan and breadcrumbs on top
  6. Bake for 35-40 minutes until golden
