Ingredients
  

  • 4 cups mixed salad greens
  • 1 ripe cucumber diced
  • 2 medium tomatoes chopped
  • 1/2 red onion thinly sliced
  • 1/4 cup fresh herbs basil or parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

  1. Wash all vegetables thoroughly in cold water
  2. Spin greens dry using salad spinner
  3. Chop vegetables into uniform bite-sized pieces
  4. Mix greens and chopped vegetables in large bowl
  5. Drizzle with olive oil and lemon juice
  6. Season with salt and pepper
  7. Toss gently to combine
