smothered chicken with rice

Ingredients
  

  • 4 bone-in chicken thighs
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 diced onion
  • 2 minced garlic cloves
  • Salt and pepper to taste
  • 2 cups long-grain white rice

Equipment

  • Large cast-iron skillet or Dutch oven
  • Sharp chef's knife
  • Cutting board

Method
 

  1. Season chicken with salt and pepper
  2. Brown chicken in skillet (8-10 minutes)
  3. Remove chicken, create roux in same pan
  4. Add vegetables and broth
  5. Return chicken to pan
  6. Simmer for 35-40 minutes
  7. Prepare rice separately
  8. Serve chicken over fluffy rice
