Southern squash casserole

Ingredients
  

  • 4 cups fresh yellow squash sliced
  • 1 medium onion diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/4 cup butter melted
  • 1 cup crushed butter crackers
  • Salt and pepper to taste

Equipment

  • 9x13 inch baking dish
  • Large mixing bowl
  • Sharp chef's knife
  • Cutting board
  • Measuring cups and spoons
  • Cheese grater

Method
 

  1. Preheat oven to 350°F
  2. Slice squash and dice onions
  3. Boil squash until tender, about 5 minutes
  4. Drain squash thoroughly
  5. Mix squash with cheese, sour cream, eggs, and seasonings
  6. Transfer mixture to greased baking dish
  7. Top with crushed crackers
  8. Bake for 25-30 minutes until golden brown
