- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- In the dish, combine peaches, sugar, and melted butter. Spread evenly.
- In a bowl, mix flour, sugar, baking powder, and salt. Add milk and vanilla; stir until smooth. Pour over the peaches (do not stir).
- In a separate bowl, dissolve brown sugar in boiling water. Gently pour over the batter (again, do not stir).
- Bake for 45-50 minutes or until golden brown and bubbly.
- Let cool slightly before serving. Enjoy warm with vanilla ice cream!
