Ingredients

  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 cup raw or dry-roasted peanuts
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt optional, enhances flavor

  • Parchment paper or silicone mat

Method
 

  1. Prep: Line a baking sheet with parchment or a silicone mat. Set aside.
  2. Heat: In a heavy saucepan, combine sugar, corn syrup, and water. Stir over medium heat until sugar dissolves.
  3. Boil: Stop stirring and let it boil until it reaches 300°F (hard crack stage), or until the mixture turns a golden amber color.
  4. Add peanuts: Stir in the peanuts quickly and cook for about 1–2 more minutes, until golden.
  5. Finish: Remove from heat and immediately stir in butter, vanilla, and baking soda. The mixture will foam up — stir fast!
  6. Spread: Pour the hot brittle onto your prepared baking sheet and quickly spread it thin.
  7. Cool: Let it cool completely (about 30 minutes), then break into pieces.
