The three bean salad

Summer gatherings need a side dish that's both tasty and healthy. The three bean salad is a classic hit. It's full of flavor and packed with protein. This recipe mixes different beans with a tangy white balsamic vinaigrette, making it a true culinary gem.

Ingredients
  

  • 1 can kidney beans drained
  • 1 can garbanzo beans rinsed
  • 1 can green beans chopped
  • 1/4 cup red onion finely diced
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons modena condiments white balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Method
 

  1. Drain and rinse all beans thoroughly in a colander
  2. Chop red onion and parsley
  3. Combine beans in large mixing bowl
  4. Whisk artisanal vinegars with olive oil
  5. Pour dressing over beans
  6. Gently toss to coat evenly
  7. Refrigerate for 30 minutes before serving
