Turkish potato salad

Ingredients
  

  • 4 medium potatoes preferably waxy varieties
  • 1/2 red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons white vinegar
  • Salt and black pepper to taste

Method
 

  1. Wash potatoes thoroughly and peel skin
  2. Cut potatoes into uniform cubes
  3. Boil potatoes until tender but firm
  4. Drain and let cool to room temperature

  6. Whisk olive oil, vinegar, salt, and pepper
  7. Pour dressing over potato mixture
  8. Gently toss until evenly coated
